Berry Island Pork

Marinade

Maple syrup
Whole grain mustard
Ginger
Sage
Oregano
Chipotle
Lime juice and zest

Squash cake
Roast squash and sweet potato with spices and garlic until soft, mash, add egg and breadcrumbs, spring onion and form into cakes. Fry in avocado or olive oil until nicely coloured. Reserve on baking tray.

Salsa
Mango, red onion, tomato, cilantro, avocado and oil, lime juice, chop and mix lightly so avocado holds shape

Slaw
Shred cabbage, carrot, diakon, jicima, radishes and dress with chipotle maple aioli.

Grill pork until caramelized and cooked a little past medium. Rest, throw cakes in hot oven, dress slaw…. Slice and plate.
